It was my “day off” but it was a packed day! I mean, every day is pretty packed but I did a LOT of running around today. Started with a 9 am product photo shoot for a marketing project we have going on for Pochi. Afterwards, went grocery shopping for Minestrone ingredients. Tomorrow we are having a potluck at work so I wanted to make sure I cooked something everyone could have even with diet restrictions. I try to be intentional with the kind of ingredients I use when I am able to cook at home. So all the veggies, produce and broth were all organic. Fresh herbs were used to flavor the soup as well. Minestrone is one of my favorite soups and easy to make into a hearty meal. I love offering pasta, Parmesan and shredded rotisserie chicken on the side to add into the soup. I picked up my car from the shop and also met up an old coworker/friend. Went back to work for a quick meeting and then it was back home to cook the soup. Even made time to work out as well. Boy am I tired?! Very productive and I was energized all day. No emotional hiccups that I can recall.
